The definition of brandy
Under Japan’s Liquor Tax Act, brandy is a spirit made by distilling a fermented mash of fruit, or of fruit and water, or by distilling a fruit wine (including fruit wine lees), with a distillation strength below 95% ABV. A product made by adding alcohol and other substances specified by law to such a spirit is also brandy.
If the distillation strength is 95% or higher, it becomes spirits. -
If alcohol or spirits are added, the product counts as brandy as long as the total alcohol from the brandy base is at least one tenth of the whole. -
For the time being, the only coloring allowed is caramel.
The name comes from Dutch merchants who called this drink “brandewijn” (burnt wine, meaning distilled wine). It became “brandy” in English in Britain. In France, it is called “eau-de-vie de vin” (water of life made from wine).
How brandy is made
Ingredients: grapes, especially white grapes. Because distillation concentrates the liquid, the high sugar content needed for wine is not required, and grapes with high acidity are suitable.
Pressing and fermentation: the juice is pressed without crushing the skins and seeds, and fermented with yeast in a vat. Because the sugar content is low, this yields a white wine of 7 to 8% ABV.
Distillation: done twice in a pot still. Distilling wine is what sets it apart from wine. -
Cask aging: freshly distilled spirit is called “nouvelle.” It is colorless and rough, so it is aged in casks to gain an amber color and a deep aroma.
Types of brandy
Broadly, brandy is divided into grape brandy, made mainly from grapes, and fruit brandy, made by distilling fruit other than grapes. There is also pomace brandy, made from the grape pomace left over from winemaking. When people simply say “brandy,” they mean grape brandy.
