Distillation is an important step that decides the aroma and strength of whisky.
We go through the two kinds of stills, differences by country, and the parts that are separated in distillation.
What is distillation?
Distillation is heating a liquid and separating and collecting components with different boiling points. At 1 atmosphere, water boils at 100 degrees Celsius, but ethyl alcohol, the main component of liquor, boils at about 78.3 degrees. Using this difference, the alcohol vapor that evaporates first is cooled to make a liquor with a high alcohol concentration.
The two kinds of stills
Continuous still | |
|---|---|---|
A pot that holds and heats the fermented liquid is connected by a pipe to a condenser that cools the vapor. The contents are replaced for each batch. A tower with dozens of plates. Rectification is repeated on each plate within a single distillation, and a high-strength liquid is drawn off continuously. |
| 酒質 Character of the spirit | 香気成分が多く、風味が強い Many aroma components, strong flavor | ライトで、モルトのような強い個性はない Light, without the strong character of malt |
Grain whisky. Much of American and Canadian whisky. |
| 蒸溜後の度数 Strength after distillation | 2回の蒸溜で、約70度前後 About 70% after two distillations | 約93度前後 About 93% |
The continuous still was devised in 1826 by the Scot Robert Stein and put to practical use in 1831 by the Irishman Aeneas Coffey. Coffey’s still was granted a patent and is also called the patent still. This invention gave rise to grain whisky. Because it is made mainly from corn, it is cheap and can be made efficiently in large quantities.

Number of distillations by country
Distillation |
|---|---|
The fermented liquid of malted barley is distilled twice in pot stills to about 70%. |
The fermented liquid of grain is, in principle, distilled three times in pot stills. |
With some exceptions, distilled in continuous stills. |
Head, heart and tail
The liquid that comes out of a pot still is divided into three parts.
Description |
|---|---|
The first part to come out. It contains unpleasant flavor components and is not used for aging. Also called the foreshots. |
The center part, after the head and tail are removed. It goes on to cask aging. Also called the middle cut. |
The last part. Low in strength, containing unpleasant oils, and not suited to aging. |
The head and tail together are called the feints.
Why pot stills are made of copper
It is easy to work with.
It conducts heat well.
It acts as a catalyst that removes unpleasant flavor components produced in distillation.
The wash still and the spirit still often differ in shape and size, and the spirit still is usually smaller. With direct-fire distillation, a flame of about 1,000 degrees is applied directly to the pot and distillation proceeds slowly. Part of the mash is toasted by the high heat, producing a malt whisky with a toasty aroma and a powerful flavor.
Drinking is for those aged 20 and over. Please drink in moderation.
