アイリッシュウイスキーは、アイルランド島でつくられるウイスキーです。EUの規則で、名前が地理的表示として保護されています。
Irish whiskey is made on the island of Ireland, and its name is protected as a geographical indication under EU rules.
アイリッシュウイスキーの条件(What makes it Irish)

産地が決まっているため、アイリッシュウイスキーは、アイルランド島でしかつくれません。製品が技術仕様書(テクニカルファイル)に合っているかを確かめる検証の仕組みも、2016年から運用されています。
Because the origin is fixed, Irish whiskey can be produced only on the island of Ireland. A verification system that checks products against the technical file has been in place since 2016.

ブレンデッドでは、軽い味わいのグレーンウイスキーに、モルトやポットスチルのウイスキーを加えて、香味を足すことが多いです。
Blends often combine lighter grain whiskey with malt or pot still whiskey for flavour.

ほかの国との関係(Other countries)
アメリカの連邦規則でも、アイリッシュウイスキーは、アイルランド共和国か北アイルランドで、その法律にしたがってつくられたものとされています。ブレンドしたものは、「ブレンデッド・アイリッシュウイスキー」と表示します。
US federal rules also define Irish whisky as a distinctive product of Ireland, made in the Republic of Ireland or Northern Ireland in compliance with their laws. A mixture is labelled “blended Irish whisky”.
