Malt whisky starts with malt, goes through long aging in casks, and is blended and bottled.

We go through what happens at each step, with the main figures.
The flow of production
Description |
|---|---|
これが麦芽(モルト) Barley is soaked in water and germinated in a germination vessel while the temperature is controlled. At the ideal point, heat is used to dry it and stop germination. This is malt. |
The malt is heated and dried in a kiln (malt drying tower). Burning peat gives it a peat aroma (smoky flavor). |
The malt is crushed and warm water is added to bring it to about 65 degrees Celsius. The malt’s enzymes turn the starch into sugar. The filtered liquid is the wort. |
Yeast is added to the wort. This produces a fermented liquid (wash) of 7 to 8% ABV. |
Generally distilled twice in pot stills. Only the “heart” (middle cut) of the second distillation goes on to cask aging. |
Malt whisky just after distillation. About 60 to 70% ABV, clear and colorless, with a sharp aroma. |
Stored for a long time in oak casks. It gains an amber color and a deep, complex flavor. |
The base whiskies are mixed and rested for a while to stabilize the flavor before bottling. |

Ingredients and the story of peat
The barley used for malt whisky is two-row barley. It is barley whose grains line up in two rows along the ear axis, and it is characterized by a lot of starch and little protein. It is also called beer barley and is used as an ingredient for Scotch, Japanese whisky and beer.
Peat is turf formed from heather (a shrub of the heath family), moss and ferns piled up over time. It is said to form only in the poor, acidic soil of cold regions. It is widespread in Scotland; it is cut in spring, dried in the sun over the summer, and carried to distilleries in autumn for use. The countries that typically use peat among the world’s whisky regions are the UK and Japan.
Casks and aging
The cask is said to be like an ingredient of whisky, alongside barley, water and yeast. White oak mainly comes from North America and is very hard and resistant to liquid. Only good-quality trees more than 100 years old with straight grain are chosen.
Meaning |
|---|---|
Burning the inside of a new cask with direct flame. It breaks down components of the wood, adding a sweet aging aroma and polyphenols such as tannins. When heated indirectly with a heater, it is called “toast.” |
Heat-treating a cask that has been used many times again to reactivate it. A whisky cask is said to last about 60 to 80 years. |
The 2 to 4% that evaporates from the cask each year during storage. Over 10 years, roughly 18 to 34% is lost. |
Resting the base whiskies for a while after mixing, to stabilize the flavor. |
Mixing malt whiskies together in a large vat. Mixing malt and grain is called blending. |
Unlike wine, whisky does not age any further once it is bottled.
Drinking is for those aged 20 and over. Please drink in moderation.
