The smuggling era (1707-1823)

In 1707, England annexed Scotland and imposed high liquor taxes on it. The Scots disliked this and began making whisky in secret deep in the mountains. This smuggling era lasted more than 100 years, until the revision of the liquor tax law in 1823.

Until then, the Scots had been drinking freshly distilled, clear and colorless whisky.

The beginning of sherry casks

Sherry casks were originally made and used in Spain to store sherry (a fortified wine). About 300 years ago, in the age of smuggling, whisky was put into empty sherry casks at hand to avoid tax and hidden deep in the mountains. When the hidden whisky was drunk later, it had changed into a wonderful drink unlike anything tasted before. From this discovery, sherry casks have been used ever since.

Whisky aged in sherry casks has a color and flavor like sherry and a deep aging aroma. The capacity is about 480 liters.

The dispute over grain whisky

Grain whisky began to be made from the middle of the 19th century, when the continuous still was invented. Malt whisky makers called grain whisky an “imitation,” and the dispute lasted a long time.

US Prohibition and Canada

US Prohibition took effect on January 17, 1920, and lasted until December 5, 1933, a period of 13 years, 10 months and 19 days. It banned the manufacture, transport and sale of liquor, but not drinking itself, so smuggling and illicit distilling were rampant. Health damage from poor-quality bootleg liquor and worsening public order followed, and the liquor tax revenue that should have come in was lost. Meanwhile, neighboring Canada did not follow the ban, so its liquor tax revenue and economy benefited, and Canadian whisky established a firm position.

Until genuine whisky was born in Japan

Whisky is said to have been brought to Japan around the time of Perry’s arrival, and the history of Western liquor began with the Meiji-era modernization. It came to be made in Japan too, but it was an imitation, no different from a liqueur, made only by adding flavorings to neutral alcohol.
